Felicia’s Apple Cobbler

Delicious Apple Cobbler recipe


  • Pie Crust
  • 2 cups all-purpose flour
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¾ cup butter
  • 3 to 4 tablespoons ice water

In a food processor, fitted with a metal blade, combine the flour, sugar and salt.  Mix well.  Add the shortening and pulse until the mixture resembles coarse crumbs.  Add the water 1 tablespoon at a time until a smooth ball is formed and the dough climbs the blade of the processor.  Remove and cover with plastic wrap.  Refrigerate for 1 hour.  Remove and allow the dough to come to room temperature before using.  Using your hands, press the bottom and sides of a  9X13 baking dish with the dough.  With a fork, cover the crust with fork.  Place the baking dish in the refrigerator and refrigerate for 1 hour.  Preheat the oven to 425F.  Bake the cold crust for 15 minutes.  Remove, cool and set aside.


Apple Filling

  • 2 #  Granny Smith apples or other cooking apples, about 6 apples, about 6 cups
  • 2 sticks  butter
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 teaspoon salt
  • 2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • ½ cup cornstarch
  • ½ cup Dark Rum
  • 2 tablespoons Pure Vanilla Extract


Peel the apples, dice them, place them in a bowl and squeeze half a lemon over the top to prevent browning. Melt 1 stick of butter over medium-high heat in each of two separate large sauté pans.  Add half of the apples to each pan. Using a spoon, coat the apples in the butter. Add half the white sugar, brown sugar, salt, cinnamon, and nutmeg to each pan. Continue to cook until the apples are soft, about 8 to 10 minutes.  In a separate bowl, slowly whisk the dark rum into the cornstarch until smooth to make a slurry.  Stir ½ of the slurry into each pan.  Add 1tablespoon vanilla to each pan.  Continue cooking for another 2-3 minutes. Remove from heat and cool completely. Pour the filling into the prebaked pie shell.


Oatmeal Crumble

  • 2 cups rolled oats
  • 1¼ cups all purpose flour
  • 1 cup light brown sugar
  • 4 tablespoons butter, cold and sliced


In a mixing bowl, combine all of the ingredients.  Using your hands, mix well.  Sprinkle the mixture over the apple filling.


Preheat the oven to 375F. Bake 45 minutes or until golden brown. Cool slightly before serving.
