Peanut Butter Cup Chocolate Mousse Brownie Cookie Pie

This is the perfect warm weather dessert!

Have you ever tried Chocolate Mousse? We have, and we love it. The stuff is so good, it gets its own holiday. Yep, National Chocolate Mousse Day is a thing! We decided to get creative and combine some recipes and cooking demo videos we found online to try and make the ultimate Chocolate Mousse. Behold, the “Peanut Butter Cup Chocolate Mousse Brownie Cookie Pie!

What you need:

  • Spring form pan or pie dish
  • 1 box of brownie mix
  • 1 cup of peanut butter
  • 1 cup powdered sugar
  • 1 tsp. gelatin
  • 2 eggs
  • ½ cup vegetable oil
  • 5 tablespoons of water
  • 2 ½ cups whipped cream
  • 1 cup chocolate chips
  • 1 cup heavy cream
  • 8 Reese’s cups or peanut butter cups
  • 8 Nutter Butter cookies or peanut butter cookies of choice

Method: Mix your brownie mix and pour into your dish of choice, bake 25-35 minutes. Let cool completely. While the brownies are cooling, chop up the Reese’s cups (or peanut butter cups) into small chunks.  Set aside.

In a small bowl, mix ½ teaspoon of gelatin with 1 tablespoon water. Set aside. In a separate bowl, mix peanut butter, ½ cup powdered sugar and 1 ½ cups whipped cream. Stir until combined then add another ½ cup whipped cream. Mix in your gelatin and water mixture. Set aside.

Once your brownie mix has cooled, add a layer of chopped Reese’s cups (or peanut butter cups) then pour the peanut butter mousse on top. Let chill for 15 minutes or so.

In a small bowl, mix the remaining ½ teaspoon of gelatin with 1 tablespoon water. Set aside. In another bowl, mix chocolate chips and heavy cream. You’ll need to heat this up as you go, just be careful not to burn the chocolate. 15-30 seconds at a time is good. Once it’s all melted, add in the remaining whipped cream. Pour mixture on top of the peanut butter mousse and let cool at least eight hours.

Take 8 Nutter Butter cookies (or peanut butter cookies of choice) and cut them in half. Place them on top of the chocolate mixture. You can do this 4 hours in or after it’s completely cooled. Your choice.

Notes: we found some recipes that called for cream cheese when mixing the peanut butter mousse, others called for an actual pie crust under the brownie layer. We even saw one where you could take the Nutter Butter cookies and make the pie crust from those! There are so many ways to make a dish like this, but we are pretty happy with how this one turned out.
