Bourbon-Bacon Pork Tenderloin: Need We Say More?

Bourbon-Bacon Pork Tenderloin … this pretty much speaks for itself.  The basic fundamentals: wrap the bacon around the pork so that it does not overlap for even grilling.  Secure it with a toothpick where the last piece meets the next one.   Stuff into pita pockets with tomato & cucumber for tasty tailgating sandwiches.

Bourbon-Bacon Pork Tenderloin Ingredients

  • 1/3 cup Dijon mustard
  • 1/4 cup bourbon
  • 3 Tbsps. honey
  • 1 Tbsps. prepared horseradish
  • 3 garlic cloves, pressed
  • 1 Tbsps. chopped fresh rosemary
  • 1 tsps. kosher salt
  • 1/2 tsps. ground black pepper
  • 2 1/2 lbs. pork tenderloin, trimmed
  • 1 {12-oz} package bacon
  • Horseradish Sauce

Cooking and Preparation

Bourbon-Bacon Pork Tenderloin

Combine the first 8 ingredients in a 1-gallon-size plastic zip-top bag. Add the tenderloins & seal the bag. Turn the bag a few times to coat the pork well. Let it chill 4 to 24 hours. Wrap the bacon slices around the pork tenderloins, securing with wooden picks.

Fire up the grill: Build a fire with charcoal. Add the packet of wood chips to the grill or smoker. Place the bacon wrapped pork directly on the grate over indirect heat, about 225 to 275 degrees. Cook 45 minutes, turn the tenderloins & place over direct heat 15 minutes or until an internal temperature registers 160 degrees.

Let stand 15 minutes. Slice & serve with Horseradish Sauce.

The pork can be served for a tasty weeknight meal. Accompany with a salad, roasted new potatoes & green beans.

Horseradish Sauce: makes about 1 1/4 cups

The Basic Fundamentals:

  • Lightened mayonnaise can be substituted.
  • Add chives or parsley for a bright pop of color.
  • 1 cup mayonnaise
  • 2 Tbsp. Dijon mustard
  • 4 tsps. prepared horseradish

Stir together all of the ingredients.

This versatile sauce pairs well with grilled flank steak & chicken. Stuff into pita pockets with tomato & cucumber for tasty tailgating sandwiches.
